Now that it's getting chillier here in NC, I have started making some dinners that I feel are best for chilly/cold weather, like chili and chicken and dumplings (all home-made, of course). What are some of your favorites to have during the fall and winter months? I'm looking for more ideas. :D

I have all my ingredients laid out by the stove right now to make chili. :) Tomorrow will be apple pork chops. The next day will be homemade chicken noodles.

Cold weather food rocks...just not overly fond of the cold weather!

I've never tried to make chicken noodles....hmmmmm. Made chili already and it's long gone!!!

Potato soup is a winner that you can eat on for days. Which reminds me I forgot to get the stuff to make that yesterday at the store, damnit! Also beef stew soup. This takes us all damn day to make (we boil the meat first for hours and hours, this is the secret).

I ate so much potato soup as a kid that I can't stand the stuff now. :( I make beef stew throughout the year, but it's always well received.

Believe it or not I actually love grilling! I keep my Weber charcoal grill under the shelter on my patio. I'll cook homemade garlic bread and aged NY strips/top serloins for all the roomates fresh from Omaha Steaks. This with some scotch and the fireplace going on in the living room. :D

Yeah it's not something I want all the time. Usually one batch will hold me over for months. It's definitely a mmm this is good to if I have to eat one more damn bite of potato soup...LOL.

McFryer Eggs.

4 strips of bacon
3 eggs
1 English Muffin

Cook up the bacon in a pan to keep the grease
Break up the bacon
Drop muffin chunks in and mix it up a bit
Drop in eggs, and mix it all together so it's in big clumps.

Om nom nom.

And I'd like to know what you consider "cold" in NC. Its 50* here and its not cold.

It's cold in NC? lol We go to New Bern, NC to get away from Wisconsin winters. I grill out all winter long, snowing, below 0°, I don't care. Chili does sound good.

I don't know. I got a cousin that lived here from birth til she was early 20's and has been in the Charlotte area for only about 8 years and she freezes when she comes back here. We went to the WVU/Pitt game last year and I just wore a heavy jacket with some jeans and was fine, she had like 6 layers on and was still freezing. :p Once you go south you start to lose that acclimation. :p

Hmmph.

Winter ain't much around here these days, either.

Took most of last winter to collect a week's sub-zero temps, and maybe 280" of snow.

I agree that when I visit WV or MD in the winter I can get kinda cold, but I'm hot-natured, so it takes a lot to get me really cold.

The most common way to make it it with ground hamburger (sirloin/chuck/etc) and a nice gravy, topped with a layer of corn, then a nice thick layer of mashed potatoes and cooked in the oven until the mashed potatoes have a nice browned skin on them. Traditional shephard's pie is made with ground lamb and is much more delicious. :)

shepards pie is made with lamb. cottage pie is exactly the same thing but made with beef.

Shepherd's pie

* 2 tbsp olive oil
* Sea salt and freshly ground black pepper
* 500g minced lean lamb
* 1 large onion, finely grated
* 1 large carrot, finely grated
* 2 cloves garlic
* 2 tbsp Worcestershire sauce
* 1 tbsp tomato puree
* Handful of thyme sprigs, leaves picked
* 1 sprig of rosemary, needles chopped
* 250ml red wine
* 300ml chicken stock
* 1kg Desiree potatoes, peeled and cut into chunks
* 50g butter
* 2 egg yolks
* Parmesan, for grating
* Olive oil
* Sea salt & freshly ground black pepper

Pan-roasted carrots

* 2 sprigs of rosemary
* Small handful of thyme sprigs
* 1 garlic clove
* 500g medium sized carrots, peeled and trimmed
* 2 tbsp olive oil
* Sea salt and freshly ground black pepper
* Few knobs of butter

1. Preheat the oven to 180˚C/gas 4 and get prepped by watching Gordon prepare this shepherd's pie.

2. Heat the oil in a large pan until hot. Season the mince and fry in the oil over moderate to high heat for 2-3 minutes. Stir the onions and carrot into the mince then grate the garlic in as well. Add the Worcestershire sauce, tomato puree and herbs and cook for 1-2 minutes, stirring constantly. Pour in the red wine and reduce until almost completely evaporated. Add the chicken stock, bring to the boil and simmer until the sauce has thickened

3. Meanwhile, cook the potatoes in boiling salted water until tender. Drain then return to the hot pan over low heat to dry out briefly. Pass them through a potato ricer then beat in the egg yolks, followed by about 2 tbsp grated Parmesan. Check for seasoning

4. Spoon the mince into the bottom of a large ovenproof dish. Using a large spoon, layer the mashed potato generously on top of the mince, starting from the outside and working your way into the middle. Grate some extra Parmesan over and season. Fluff up the mash potato with a fork to make rough peaks. Bake in the oven for approximately 20 minutes, until bubbling and golden brown

5. For the carrots bring a pan of water to the boil with the rosemary, thyme and garlic. Boil the carrots in the water for 3 minutes to soften slightly, then drain and pat dry. Heat the oil in a large non-stick sauté pan then add the carrots and some seasoning. Brown the carrots all over until just tender, adding the butter towards the end of cooking

Hungarian goulash is great in cold weather, the paprika will warm you up. I also like to make Italian cioppino. You can have it in a bowl like a stew or over pasta.

Baked beans and cut up hot dogs in a casserole dish covered with cornbread is good for a quick meal.

I'm set to make pinto beans and cornbread later this week. I'm making BBQ ribs for tomorrow evening. I've never tried my hand at goulash, either. I will have to investigate some recipes.
