Ive noticed that oil pressure in 3s's from the point of the stock sender location is greatly a function of just oil weight, oil pump and bearing clearance, not much else.

It still has to do with pressure. Even though the sender is on the pump itself, the restriction in flow throughout the oil galleries and bearings feeds back to the sender as that is the amount of pressure that the pump is working against to pump the oil through the system.
