Stock cars have the delay either factored in like the AEM or MegaSquirt setups (aka a variable) or their timing table ends up compensating for it. I bet most stock cars would vary a little bit from car to car when hit with a timing light due to stacking tolerances of the installation of trigger wheels, sensor delays, etc.
