Grinding gears is setting off my knock sensor.

Is this normal operation or is my knock sensor way too sensitive?

My new trans will pop out of reverse once every 10 attempts and when it does it makes my CEL-on-knock trigger.

I ask because my car experiences knock at high rpms. I know my engine is noisy and I am wondering if this knock detection when grinding gears is a symptom of an overly sensitive knock sensor and my car might be registering false knock under high rpm / partial throttle / full throttle.

How much knock are you seeing and at what RPMs? OEM sensor? If the sensor is tightned down too much it can pickup too much knock

Haha yep I've seen missed gears cause false knock many times.
