    I now have a cupboard shelf just for teh hot

    My little sister (bless her heart) just sent a care package-





    I have a very (very, very, very) healthy respect for capsaicin, but I love it and I can't get enough of it.

    I like it enough that I'm willing to risk digestive distress - the temporary kind - in order to enjoy it.

    I have a small variety of grinds and dried stock, and my own stash of hot stuff.

    Anyway, the cool thing is that a little goes a looooong way, so it doesn't take up a shitload of space, so I am STOCKED.

    Who else?

    I know fearpb is kinda gonzo...

    I was kinda stalled until I discovered habaneros years ago.

    There's so much more than just heat to peppers - I'm working my way back toward the middle a little bit these days - always liked Serranos (used to eat 'em straight-up and drink 100 proof Comfort); stuff would turn me into a jet engine...

    Anyway, just laid in some of those big Hungarian chilis - a little hotter than the Serranos.

    It's kinda neat to only have to process one little dried Caribbean red to turn a huge crock of chili into DA BOMB.

    I just got my hands on some Carolina Reapers. I am going to have to figure out how to use them now. I have a bottle of hot sauce that the only ingredients are ghost pepper, and capsaicin.......It is a very gradual build of heat, and then it lingers for hours. A few drops seasoned my chili.

    Actually, yes - I found a world of difference between the 80 and 100-proof, and if you don't believe me, take about a three inch Serrano, give it about five serious chews, and dump about 2oz of SC100 on top of it.

    Chew slowly and savor.

    Repeat until you have no peppers or So. Comfort left.



    Remember to wipe gently.

    capsaicin isn't something i'm fond of. 10 grams can be lethal. high concentrations of it will cause chemical burns. but most of all--it overpowers other flavors.

    don't get me wrong, i love richly flavored foods. it's practically impossible for me to consume enough garlic. the thing is, i enjoy rich and flavorful--so a blend of strong flavors is ideal to me. for example, pizza made with pesto sauce, gorgonzola cheese, cooked/diced garlic cloves, and kalamata or italian olives (maybe even banana peppers); hardly "capsaicin" spicy, but EXTREMELY strong flavored and delicious. if i were to throw habaneros into the mix, they'd completely overwhelm the other flavors. in my experience, cooked jalapenos (ala the kind they use for poppers) are about as strong of a capsaicin flavor as can be added without unbalancing a food dish.
