I entrusted my driver's A-pillar to another shop, this guy was able to take the time to properly explain what could and couldn't be done, he even took the time to show stich examples and grabbed some scrap material that he had to show his plan of attack. In the end I still paid less than half what the first shop quoted me and the way the first shop was explaining things, the shop I took it to did the same thing. The best part is, this shop was only 1/2 an hour away from home.
So here they are now, I am MUCH happier with the outcome.
The reason for only the single french seam vs. the double is that the holes that need to be cut for the gauges are so close the the edge that I would of cut the stitching when cutting out material to mount the gauges. There was also two small areas that Gary, the shop owner told me that he just could get in there with his machine to do double french seam.
When I get the plastic cutout for the wiring to run though the A-pillar, I will post pictures of the gauges and tweeter installed.
