July 2014 COTMWe follow the earth. The earth follows the stars. The stars know their way and though the body dies. The stars will remain, like the waves of the sea and restless slate.
My cousin lives down in Texas and he just started brewing. Must be the thing to do down there. Someday I am going to read into it. We have a lot of home breweries in Vermont that turned into something big (Heady Topper, Switchback, magic hat etc..).
I try to do it every year around this time when it is some what cold here.
Last years was only a 5 gal batch. I plan on doing 15 total over the next few weeks.

This weeks batch calls for
6.6 lbs of light malt extract
1lbs of light dried malt extract
12oz of crushed amber crystal malt
8oz of biscuit malt
1 1/2oz of Kent Goldings Hops
1 1/2oz of Fuggles Hops
2tsp of gypsum
1lbs of my choice of honey
and some liquid yeast, I will probably go with wyeast labs american ale yeast.
Racked the Bavarian Hefeweizen into the secondary fermenter tonight. Then brew the Honey Ale, which is in the primary fermenter now

Looks good! I just brewed a cream ale last weekend.
You try doing any hard ciders or lemonades? I'm gonna take a stab at like 3 one gallon batches of cider with different additions and back-sweeteners and see how they turn out.

Cream ale sounds delish. As for ciders, I am not big on them so I have only done beer. I would like to try my hand at distilling alcohol tho.
