So... I think I installed the 6 speed plate that goes between the trans and block when I put in the 5 speed. Do I need to pull the tranny and swap them or should I be ok?

Here are the difference between the two. Left is 5 speed, right is 6 speed. From 3SX

The difference is actually four bolt and two bolt block, not trans trans type. ASA lists the later style plate for a 93 year model car, which had a 5 speed, so you should be fine...
I do know that FWD ATX to FWD MTX is definitely different, the starter is in a slightly different position. I found this out the hard way.
Couldn't comment on AWD.

Another question, what is it's purpose?

I speculate its just a drive line shield to help deter false knock from going over bumps in the road.

"I don't actually work on cars, I just talk about them on the internet."
Usually you see some squishy gasket when you don't want to induce point loads or stresses due to uneven surface finish. It is possible that the flexible metal block plate exists to "squish" and help even out the mating between the block and the transmission. This is just speculation.
The secondary, and actually this is probably the primary reason - is that it closes off the air gaps around the starter and oil pan - preventing debris from hopping up off the road and into your bell housing.
My guess would be that it's primarily to shield the bellhousing from debris as well. I think I'll be ok as the newer one has more clearance than the older one.
Here is the newer plate laid over the older plate.
